This year we tried Tofurky along with turkey for the thanksgiving meal. While my expectations were low, I have to admit that the Tofurky wasn’t quite as nasty as I had imagined. It is a seitan/soy product textured to resemble meat. Truthfully, in texture it resembles a firm bologna or salami lunchmeat. The package recommends that it be sliced thinly.
Buried in mashed potatoes and real turkey gravy, the Tofurky was moderately edible. It is hard to say just how thankful the pilgrims might have been if Squanto had brought Tofurky to the feast. I’ll wager that the soiree would have gone badly.

I have become quite a fan of the Black Bean Veggie Burgers. Your Tofurky looks too much like Canned Ham to me, which has very negative connotations for me.
I think it is a foolish business to try and make vegies look like meat. You do not see anyone trying to make beef look like broccoli – or at least I don’t think so.
I’ll treat to Chez Panisse or Greens this spring in San Francisco.
Prepare veggies so as to maximize the pleasure (think stuffed Acorn Squash here) and meats likewise.
Forget this crossdressing of your meals.
Yeah, I agree. It is a fools errand to attempt to make vegetarian food appear meat-like. I have successfully remained vegetarian for 7 weeks now. It’s quite a bit less convenient in terms of what is available in restaurants. But the payoff is worth it.
